WHAT ARE MICROGREENS?

Microgreens are young, edible plants that are harvested at an early stage of growth, typically between 7 to 21 days after germination. They are a type of vegetable or herb greens, but unlike sprouts, they are grown in soil or other growing mediums rather than just in water. Microgreens are valued for their vibrant colors, delicate textures, and concentrated flavors, making them popular additions to various dishes, salads, sandwiches, and garnishes.

These tiny greens are harvested when they have developed their first true leaves, which are the second set of leaves that grow after the initial cotyledon (seed leaf). They are usually around 1 to 3 inches tall, depending on the specific plant variety.

Microgreens come in a wide range of flavors, from mild and neutral to strong and spicy, depending on the type of plant. Some common microgreen varieties include broccoli, radish, mustard, arugula, kale, cilantro, basil, and many others.

Not only do microgreens add visual appeal and taste to meals, but they are also known to be packed with nutrients. Studies have shown that some microgreens can contain higher concentrations of vitamins, minerals, and antioxidants compared to their fully mature counterparts.

Due to their popularity and nutritional value, microgreens have become increasingly popular among chefs, home gardeners, and health-conscious individuals, leading to their availability in many grocery stores and farmers’ markets. Moreover, they can be easily grown indoors or outdoors, making them a convenient and accessible addition to any kitchen or garden.

MICROGREENS, A UNIVERSE OF NUTRIENTS

Microgreens are indeed a powerhouse of nutrients packed into tiny, vibrant greens. They are young, edible plants harvested at an early stage of growth, typically around 7 to 21 days after germination, when the first true leaves have developed. Microgreens are not the same as sprouts; they are grown in soil or a soil-like medium and are cut just above the soil line for consumption.

These tiny greens have gained popularity in recent years due to their high concentration of vitamins, minerals, antioxidants, and other essential nutrients. While their nutrient content can vary depending on the specific variety of microgreens, some common nutrients found in them include:

  1. Vitamins: Microgreens are rich in various vitamins, such as vitamin C, vitamin K, vitamin E, and a range of B vitamins (thiamin, riboflavin, niacin, etc.). These vitamins play crucial roles in maintaining overall health and supporting various bodily functions.

  2. Minerals: Microgreens contain essential minerals like iron, calcium, magnesium, potassium, and zinc, which are vital for maintaining bone health, muscle function, and proper cellular activity.

  3. Antioxidants: Microgreens are particularly abundant in antioxidants like beta-carotene, lutein, zeaxanthin, and other carotenoids, as well as flavonoids. Antioxidants help protect the body against free radicals, which can damage cells and contribute to various diseases.

  4. Phytonutrients: These are plant compounds that offer health benefits, including anti-inflammatory and immune-boosting properties. Sulforaphane, for instance, is a phytonutrient found in broccoli microgreens known for its potential cancer-fighting properties.

  5. Fiber: Microgreens contain dietary fiber, which aids in digestion, supports gut health, and helps regulate blood sugar levels.

  6. Protein: Microgreens can contain a moderate amount of protein, making them a valuable addition to plant-based diets.

Due to their nutrient density and appealing taste, microgreens are commonly used in salads, sandwiches, smoothies, and as garnishes in various dishes. Adding them to your diet can be an excellent way to enhance the nutritional profile of your meals.
